Easy Slow Cooker Vegetable Beef Soup

Ingredients
1-64 oz. container V8 Vegetable Juice, Low Sodium1-10.5 oz. can beef broth2-10 oz. frozen mixed vegetables24 oz. stew beef
Directions
In a large slow cooker, combine the V8 juice, the beef broth and the stew beef. Cook on low for about 6 hours. About an hour to an hour and a half before serving, stir in the mixed vegetables and turn to high. Cook until the veggies are of the desired consistency. Makes 8 servings.
