1 Head Cauliflower1 Cup Fresh Spinach1 Clove Garlic3 Green Onions2 tsp Extra Virgin Olive Oil1/2 tsp Sea Salt (or seasoned salt)3 Tbsp Fat Free Sour Cream
1. Roughly chop the head of cauliflower into florets. Steam the cauliflower on the stove until the florets are just tender. Drain water and set aside.
2. Saute 1 tsp olive oil, garlic and green onions in a small saucepan over medium heat until tender. Add the spinach and continue sauteing until the spinach begins to wilt. Remove from heat.
3. In a food processor or high-speed blender, combine the spinach mixture, steamed cauliflower, salt, sour cream, and remaining olive oil. Process until smooth and season to taste.
Serving Size: 4 Equal Servings
