Pumpkin Oatmeal Raisin Cookies w/ Cinnamon Chips

Ingredients
1 1/4 cups flour1tsp baking soda1 tsp pumpkin pie spice1 tsp cinnamon1 tsp nutmeg1/4 tsp salt1/4 cup unsalted butter, at room temperature3/4 cup sugar3/4 cup packed brown sugarOrganic Applesauce, Unsweetened, 113 grams (small container) 1 large egg1 tsp vanilla1 can pumpkin puree (Approx 1.5 cups)3 cups old-fashioned oats1 1/2 cups cinnamon chips1/4 Cup Golden Raisins
Directions
Preheat oven to 375. Line two baking sheets with parchment paper and set aside.
Whisk flour, baking soda, pumpkin pie spice, cinnamon, nutmeg and salt together in a medium bowl. Set aside.
In the bowl of a stand mixer fitted with a paddle attachment, cream together the butter and sugars until light and fluffy, about 3 minutes on medium speed. Add in the egg, applesauce and vanilla and mix until well-combined, scraping down the sides as necessary. Stir in the pumpkin puree.
Slowly add in the flour mixture. Fold in the oats, raisins and cinnamon chips.
Drop the dough by the tbsp onto the prepared baking sheets. Bake for 12-15 minutes or until the cookies are set and golden. Remove from the oven and cool in the pan for 2 minutes. Transfer to a wire rack to cool.
