Strawberry Pie

9 in. baked pie crust (can use fresh or frozen)6 cups fresh strawberries (1 1/2 quarts)1/2 cup sugar3tbs cornstarch1/2 water3 oz. low fat cream cheese, softened (a little less than half of an 8 oz. package)
Bake the pie crust and cool.
Mash enough strawberries to make 1 cup. Mix sugar and cornstarch in a saucepan, stir in water and mashed berries. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir for one minute. (Color will change from a pink to deep red during this minute). Cool.
Beat cream cheese until smooth and spread in the bottom and sides of the baked crust. Cut the remaining berries (saving 3 or 4 for final decoration) into pieces and put into the crust. Pour the cooked berry mixture on top and smooth with spatula. Top with thin slices of saved berries for decoration, cover with plastic wrap, and chill in refrigerator for at least 3 hours or until set.
Serving Size: makes 8 slices from 9 " pie

Is tis really only 3 oz cream cheese? Or are we talking 8 oz package? - 4/19/13

It's really 3 oz of reduced fat cream cheese, a little less than 1/2 of the 8 oz. package....it is just meant to seal the baked crust so that the berry juices don't make it soggy too fast. I changed the wording to clarify. Thanks for pointing it out. It was confusing!:)
