Lentil Soup

Ingredients
2 stalks celery, diced1 cup sliced carrots1/2 onion, diced3 garlic cloves, chopped1 tbsp olive oilItalian seasoning (or seasoning of choice)3 sausage links, sliced1 can diced tomatoes1 small can tomato sauce4 cups vegetable stock (or chicken or water)
Directions
Put olive oil and diced celery, carrots and onion into a frying pan, cover and cook until all vegetables are softened and onion is clear. Add spices and garlic, cook another 2 minutes. Add stock, sausage, and tomato. Fill cans with water to rinse and add to pot as well. Add lentils, bring to a boil. Simmer for at least an hour.

Serving Size: Makes about 8 1.5-cup bowls
