Lentil Soup

Ingredients
1-1/2 c red lentils2 celery stalks chopped1/2 onion chopped1 med carrot, peeled and chopped1 tsp dried organo1/2 c white or brown rice1/2 c fresh parsley leaves chopped1 c tomatoes chopped10 c of vegetable or chicken stocksalt and pepper to taste
Directions
Combine all ingredients in large pot. Bring to a boil. Reduce heat to low and simmer for 45 min or until lentils are soft.
