curried tofu and bulgar

Ingredients
I brick tofu1 C dried course bulgarI C coconut milk1 C soy milkSpices to taste--curry powder, or mix your owngrated gingerGreen onion choppedFresh cilantro chopped
Directions
mix coconut and soy milks, heat, add spices and ginger, bulgar, cover and simmer until liquid is absorbed and burgar is tender. Meanwhile, dry fry cubed tofu. When bulgar is done gently add tofu cubes and fold in. Serve with chopped onions and cilantro on top.
