Using:2 stalks broccoli3 carrots10oz mushrooms16 oz bag froz spinach1 jalapeno pepper (optional)1 onion4 1" chunks ginger5 garlic clovesjuice of 2 limes1.2 c cilantro1 14-oz can light coconut milk1 packet Swanson Flavor Boost concentrated veg broth
In large pot, saute chopped onion in bit of broth w/ water on medium heat; chop the garlic, ginger and optional jalapeno (or substitute red pepper flakes) and add. Saute for c. 5 mins.
Add 4 cups water, rest of broth, the can of coconut milk, cut up broccoli, spinach, mushrooms, and carrots. Cook for c. 20 mins.
Add lime juice and chopped cilantro.
Blend with an immersion blender.
