19 oz enchilada sauce12 oz frozen corn14 oz chicken breasts1 can (4.5oz) diced green chiles 1 can (15 oz) black or pinto beans (drained, rinsed)2 cups chicken brothShredded Mexican Cheese, if desiredChopped fresh cilantro, if desiredCrushed tortilla chips, if desired
Place all ingredients in slow cooker. Cut thawed chicken into cubes and place in slow cooker. Mix and cover; cook on Low heat setting 7 to 8 hours.
Top each serving with cheese, cilantro and tortilla chips (if desired).
