Roasted Curry Sweet Potato and Cashews

Ingredients
1 sweet potato, peeled and chopped into 1/2 inch thick slices.2 tablespoons of curry powder1 tablespoon olive oil1/8 cup cashews1 tablespoon olive oil1 dash of salt
Directions
Preheat the oven to 170C.

Chop sweet potato into chunks or slices 1/2 inch thick. Coat in olive oil (for less fat, use an olive oil spray).

Sprinkle liberally with curry powder, toss to coat.

Lay out sweet potato slices on a cookie sheet, sprinkle cashews around them.

Bake 15 - 20 minutes or until the cashews are tender. The nuts will turn out toasted brown. Great for a snack or a side dish. Serves 2
