*Whole Wheat Flour, 0.5 cup *Flour, white, .5 cup Oat Meal (Quaker Oats - Old Fashioned - dry), 1 cupsugar, 1/4 cupSalt, .5 tsp Baking Soda, 1 tsp Cinnamon, ground, 1 tsp**Flax Seed Meal (ground flax), 1 tbspBanana, fresh, 4 small (6" to 6-7/8" long) or 3 mediumEgg, fresh, 1 large Water, tap, .25 cup
Prepare a 12-muffin pan (regular size muffins) by spraying with non-stick spray.
Mix together dry ingredients (everything except banana, egg, and water).
Mash bananas or process in food processor. Add to dry ingredients along with egg and water and mix until all is moistened.
Fill cups with batter. They will be more than 3/4 full and plump up above the pan nicely when done. Bake at 350 degrees for 21-23 minutes until browned.
Serving Size: Makes 12 muffins
