Au Gratin Casserole with Smoked Sausage and Bell Peppers

1 C. chopped onion1 T minced garlic2 T Blue Bonnet Light margarine1 pkg. Smoked Sausage, diced3/4 red bell pepper3/4 orange or yellow bell pepper3/4 green bell pepper3 T black olives, chopped2 pkg. Betty Crocker Au Gratin or Bacon Cheddar Potatoes (using boiling water, light margarine, and skim milk according to the directions)Parsley and Black Pepper to taste
Preheat the oven to 450 degrees. In a large nonstick skillet melt 2 T margarine. Add chopped onion and minced garlic. Sprinkle with a dash of salt to sweat as they sautee. Dice smoked sausage and add to onion/garlic mixure. Chop bell peppers and add to skillet. Sautee for about 10 minutes to let flavors marry. Meanwhile, following instructions on box, bring water to a boil. Remove from heat. Add margarine and skim milk cheese seasoning. Whisk until blended. Spray a large casserole dish with nonstick cooking spray. Add potatoes from pkg. Pour cheese sauce over the potatoes. Stir in skillet mixture and black olives until combined. Sprinkle parsley and black pepper to taste. Bake uncovered in oven at 450 degrees for 25-30 minutes until golden and bubbly. Let sit 5 minutes for sauce to thicken.
