Split Pea Soup

Ingredients
1 bag dried split peas1 leftover ham bone with meat left on (you want about 2 cups diced)1 onion, diced2-3 medium carrots, sliced thinly1 T olive oil6 cups water
Directions
Heat olive oil in soup pot. Saute the onions for a few minutes until tender. Add in the split peas, carrots, and the ham bone. Pour water over top. Cover & cook 2-3 hours until the peas have dissolved, stirring occasionally. Remove bone from the soup pot and shred any large chunks of ham. If thicker soup is desired, allow to cool and then reheat.
