Oatmeal Chocolate Chip Cookies

Ingredients
2 3/4 cups all purpose flour1 1/2 tsp baking soda1 tsp ground cinnamon1 tsp salt2 cups unsalted butter, at room temp2 cups tightly packed brown sugar1 cup granulated suarg2 tsp vanilla extract3 large eggs5 cuts rolled oats1 1/2 cups mini chocolate chips
Directions
Preheat the oven to 375 degrees. Lighlty spracy cookie sheets with cooking spray or line them with parchment paper. Sift the flour, baking soda, cinnamon, and salt int a bowl and set aside.

In a stand mixer fitted with the paddle attachment, cream together the butter, sugars, and vanilla extract on meidum speed until smooth and light in texture, 2 miutes. Add the eggs one at a time, beating well after each addition. On low speed, mix in the dry ingredients, oats, and choclate chips until just combined. Scrape down the bowl as needed to blend evenly. Chill the dough for 10 minutes.

Roll the dough into one inch balls and flatten. Bake 12 - 14 minutes.

Makes about 75 cookies.
