Italian Sausage & Zucchini Soup

Ingredients
1# Italian sausage, loose3 stalks celery, diced2 med onions, chopped4 c. zucchini, shredded4 c. beef stock1 15-oz can diced tomatoes (or 16 oz tomato sauce)1/2 t salt (optional)1/4 t pepper2 t fresh basil (or 1/2 t dried basil)
Directions
Brown sausage; drain fat. Add celery, onions & zucchini & simmer a few minutes until tender. Add remaining ingredients and simmer about 30 minutes.

    I make this soup often. Sooooo good. My husband doesn't like the hot sausage so you can substitute the mild and it's still very good, just not hot. :) - 2/16/14
