Sweet Potato Pancake

Ingredients
1 cup baked sweet potato6 egg whites1/2 cup raisins1 Tbsp coconut oil
Directions
Mix potato, egg, and raisins until it's a thick batter consistency.

Heat skillet (sprayed with oil) to medium heat.

Add batter, cover pan, cook 3-5 minutes until fluffy.

Flip, recover, and cook another 3-5 minutes until solid/fluffy consistency.

Top with coconut oil.

Serving Size: Makes 2 big pancakes
