Ingredients
Dreamfields Rotini - 1/2 Of Box 2 Cups Broccoli, Lightly Steamed, Chopped1 Home-Roasted Red Pepper, Chopped8 Large Raw Baby Carrots. Chopped1/2 Small Purple Onion, finely Chopped4 Artichoke Hearts (In Water), Diced2 tbsp. sun-dried tomatoes, chopped2 Tbsp Light Mayonnaise (Calculated With Dukes)1 Tbsp. Balsamic Vinegar (more to taste)2 tsp Extra Virgin Olive Oil 2 Tsp Deli (Brown) Mustard I Tsp Lime Juice 2 Oz. Grated Parmesan Cheese 1 Tsp Mrs. Dash Garlic & Herb Seasoning Blend 1 Tsp Mrs. Dash Lemon Pepper Seasoning BlendBlack Pepper To Taste
Directions
Roast red pepper in the oven for 30 minutes at 500 degrees, turning twice. Let cool, skin and de-seed, then chop. Boil pasta and drain. Lightly steam broccoli, then chop with carrots, onion, artichoke hearts, and sundried tomotoes. Mix all ingredients together and stir well.
