Red Onion Pizzas

Ingredients
2 teaspoons oliver oil3 cups thinly sliced red onions2 teaspoon red wine vinegar1 teaspoon julienned orange zest1 cup thinly sliced zucchini4 small pitas ( 1 ounce each)3 ounces crubled feta cheese1 tablespoon+ teaspoon chopped fresh cilantro1 teaspoon of plasey
Directions
1. In a large nonstick skillet, heat 1 teaspoon of the oil and 1/4 cup water; add pnions. Cook over low heat, cover, 30 minutes.Stir in vinegar and orange zest; cook, uncovered, 10 minutes, or until all liquid is absorbed.
2. Preheat oven to 400F. Spray baking sheet with nonstick cooking spray.
3. In small bowl, combine zucchini, 1 tablespoon water and the remaining teaspoon of oil; toss to coat
4. Arrange pitas on prepared baking sheet; top each with one-fourth of the zucchini slices and bake 8 minutes, Spoon one -fouth of the cooked onions on each pita; bake 6 minutes. Sprinkle each pita with one -fourth of the feta cheese and cilantro; bake 2 minutes.
