1 lb haddock or cod fillets½ cup sliced onion½ cup sliced carrots½ cup sliced celery1 medium bay leaf½ medium lemon, sliced paper thin2 sprigs fresh parsley, stems removedFreshly ground black pepper¼ cup water
Cut fish into 4 serving pieces if necessary. Put all ingredients except fish in skillet. Cover
and simmer for 5 minutes. Add fish in a single layer, cover and simmer gently about 5 more
minutes or until fish flakes with fork. Do not overcook. To serve, remove bay leaf and parsley,
place fish fillets on plates and top with vegetables. Garnish with fresh parsley if desired.
