Pork Chop Nacho Casserole

2 TBS vegetable oil1 medium onion, finely chopped1 pound boneless pork loin chops, cut into bite-size pieces1 1/2 Cups instant brown rice, uncooked1 (10.5 ounce) can condensed cream of chicken soup low sodium1 (15 oz) can black beans, rinsed and drained1 (28 oz) can rotel diced tomatoes and green chilis3 TBS chunky salsa1/4 cup water1 TBS and 1 tsp ground cumin1 Cup shredded Colby cheese or shredded cheddar
Preheat oven to 400 degrees. Saute onions in 1/2 Tbs oil until translucent. Set aside. In LARGE skillet or stock pot, brown meat in 1 1/2 Tbs oil. Drain oil To the meat add the rice, soup, beans, diced tomatoes and green chilis, salsa, water, and cumin. Cook over medium high heat until boiling. Reduce heat to medium and cook for 15 minutes. Remember to stir often to prevent rice from sticking. Transfer mixture to a 13x9 casserole dish. Cover with cheese and bake 5 to 10 minutes until cheese is melted. Serve with tortilla chips or whole wheat tortillas. You can also serve with a dollop of sour cream and/or chopped red onion.
