Ingredients
one half cup egg beaters or 2 eggs2 tablespoons low fat cottage cheese or ricotta cheesevanilla flavoringcinnamon
Directions
mix all ingredients together and cook in pan or place all together in a zip and steam bag and microwave for 3 minutes top with a small amount of I cant believe its not butter and if you wish a small amount of sugar free syrup. Seriously this is good, I was skeptical because I dont like eggs but it really tastes like pancake

    It tastes pretty good... more like french toast than a pancake, but that's ok. My biggest complaint is the consistency. I made it with low fat ricotta and tried to cook it in a pan like a normal pancake. It was VERY runny and nearly impossible to cook that way. Might be better with the microwave - 3/5/08

    We didn't like this at all. Very runny, and made very thin pancakes. I even added a couple teaspoons of flax seed to the mixture, which did not help. We threw out the rest of the batter:( - 4/22/12
