Spinach Orzo Salad with Chicken, Cucumber and Red Bell Pepper

Ingredients
4 C fresh baby spinach1 C orzo pasta (cook according to package directions)1/4 tbsp lemon zest1/4 C lemon juice1 tbsp EVOO1/2 tsp salt1 tsp minced garlic1/3 tbsp homey (or to your taste)1/4 tsp balck pepper (or to your taste)1/2 C chopped red pepper1 Chicken breast (no skin) baked1/2 cup chopped cucumber1/3 C chopped green onion5 sprigs fresh dill chopped1/2 C cheese (I used feta)
Directions
Cook orzo according to package directions and drain. Bake chicken ahead of time and allow to cool. Shred chicken. Compine other vegetables. Mix other spices into dressing and add to vegetables/orzo and chicken. Cool in refrigerator at least 2 hours.
