Slow Cooker Mexican Quinoa

Ingredients
1 cup whole grain quinoa2 cups water1 can black beans [rinsed, drained]1 can corn [rinsed, drained]1 bag spinach optional: garlic, pepper, other spices, onion, etc.
Directions
spray slow cooker.
rinse/drain quinoa, add to slow cooker along with 2 cups water.
rinse/drain black beans and corn, add to slow cooker.
Top with spices of choice.
Cook on high for 2-3 hours. Cook on low for 4-6 hours.
With about 30 minutes remaining, toss in spinach.
