Spinach & Ham Omelette Filling

Ingredients
2 cups chopped onion2 cups chopped multi-color bell peppers4 cups fresh mushrooms, diced5 cloves garlic, minced11 ounces lean ham, diced4 cups packed fresh baby spinach1 TB. olive oil
Directions
Dice/chop/mince veggies (except for spinach). Add olive oil to large skillet and heat to a shimmer. Saute veggies until nearly tender. Add diced ham and heat. Add spinach and cook just until wilted. Makes filling for 10 omelettes. Store in refrigerator for about a week.
