*Canola Oil, 1 tbsp (remove) Onions, raw, .5 cup, chopped (remove) Garlic, 1 tsp minced ((remove) Ginger Root, 1 tsp minced (remove) Turmeric, ground, 1 tsp (remove) Ground*coriander seed, 1 tbsp (remove) Whole Cumin seed, 1 tsp (remove) *Potato, raw, 1 large (3" to 4-1/4" dia.), peeled and cubed (remove) Spinach, frozen, 1 package (10 oz) yields , thawed and drained(remove) *Garam Masala, 1 tsp (remove)
Heat oil in a large skillet (With lid) Add cumin seeds and cook until they pop. Add onion and stir for 2 min. Add garlic and ginger, stir for 2 more min. Add potato, turmeric,coriander and a little water and stir to coat potato with spices. Add spinach and cover. Simmer until the potatoes are soft, checking every few minutes and adding water as needed. Add garam masala and mix well. Stir uncovered until all liquid is absorbed.
