Egg, fresh, 9 large Spinach, fresh, 2 cup Red Ripe Tomatoes, 0.5 cup cherry tomatoes Mushrooms, canned, 2 cup Zucchini, 0.5 cup, sliced *Cheese, Dairy-Free, Daiya, Mozzerella Style, 2 serving
spray square baking dish with nonstick spray, put spinach evenly in bottom of pan, add tomatoes and mushrooms, pour beaten eggs on top, arrange zucchini slices in single layer, put cheese on top. Bake in 375 degree oven for 30 minutes or until eggs are set.
