Sweet Potato and Zucchini Souffle

Ingredients
2 sweet potatoes (peeled and cut into chunks)3 white potatoes (peeled and cut into chunks)2 Zucchini and 1 yellow squash (trimmed and cut into thick slices)4 TBSP Margarine, cut into chunks1/2 cup eggbeaters (equivalent of 2 eggs, slightly beaten) 1 envelope onion soup mix
Directions
- Preheat oven to 350
- Boil potatoes and zucchini until soft (for extra flavor, boil in chicken stock)
- Mash in the margarine, eggs, and onion soup mix
- Put into greased 9X13 pan and cook for 45 minutes or until set
