1 8oz can of Tomato Sauce1 medium sized Zucchini1 medium sized Summer Squash (or yellow bar)2 cloves of Garlic1 Small Shallot1 Tbsp Olive OilFresh Thyme, Rosemary, and Oregano
Preheat oven to 350 degrees. Use a 9 inch round or oval baking pan. Place olive oil in pan swirl so it coats, add garlic and shallots, pour tomato sauce into pan, mince herbs and add to tomato sauce. Slightly stir, then thinly slice the squash about 1/8 of an inch, then place one at a time in a circular fashion alternating green to yellow. Add Salt and Pepper to taste. Place parchment/wax paper that is cut to fit the pan over vegetables and cook at 350 degrees for 45-60 minutes until soft.
The Squash can be chopped, and all ingredients put into a pot and cooked for 15 minutes. But I like the oven version better. You can choose to be make it a hearty vegetable stew or an elegant side dish.
