Refried Pintos

3 cups pinto beans (soaked overnight)1/4 cup chopped onions6tbs of your favorite taco sauceshredded cheddar cheese as a toppingfat free sour cream as a topping
after soaking pintos overnight, place them in enough water to cover them by about 3 inches. Boil for about an hour and a half or until they are softened
sautee onions using nonstick cooking spray and a tbs of water (for low fat cooking) or olive oil
mash pintos in pan using potato masher or back of wooden spoon
add cooked onions, desired amount of taco sauce and mix
spoon into bowl top with cheddar cheese or a dollop of fat free sour cream
