GF Vegan Coconut Banana Muffins

2 cups GF flour blend (half sorghum, half brown rice, with a few (4ish) tablespoons of buckwheat)2 tbsp ground flaxseed1-2 tbsp cane sugar1 tbsp baking powder1/2 tsp baking soda1/4 tsp sea salt1 cup almond milk (may be vanilla flavoured)3/4 cup coconut milk1 tsp vanilla extract2 bananas, mashed3/4 cup unsweetened shredded coconut1 tbsp crushed pecans
Mix dry ingredients,
Add wet ingredients,
Add mashed bananas,
Add coconut and crushed pecans,
Spoon evenly (about two and a half tbsp each) into nonstick cupcake/muffin tin
Bake at 350 for about 25-30 minutes
Let cool thoroughly before removing from tin.
