Maple Pecan Sweet Potato Casserole

Peeled sweet potatoes: 6 Orange: juice & pulp onlyOlive oil, 1 Tbs for bottom of pan & 2nd layer of potatoesGood quality REAL MAPLE SYRUP (not imitation or flavored) 3 Tbs drizzled over potato slicesSprinkle cinnamon & ginger over each layer of the potato slicesPour egg beaters (1 small container = 2 servings) over the potatoes. Pour about 1/2 small container water over the egg substitute to wash it down into the casserole plate. Top with 1/2 Cup of chopped pecans. Cover with lid or foil & bake for one hour at 350 degrees in preheated oven. Take lid off during last 15 minutes.
Preheat oven to 350 degrees
Spray casserole pan with Pam or other cooking spray
Cook for 60 minutes, uncovering during the last 15 minutes.
