Spinach Quiche Muffins

Ingredients
16 oz carton Egg Beaters10 oz package frozen spinach, cooked or thawed3/4 cup reduced fat mozzarella cheesedash nutmeg
Directions

Whisk Eggbeaters and nutmeg. Divide approx. half of egg mixture between 9 silicone muffin cups. Divide spinich among muffin cups, top with cheese and rest of egg mixture.

Bake at 350 approx 20 minutes or until set and nicely browned.
