4 cups vegetable broth 8 oz skinless smoked turkey sausage, sliced1/2 cup red onion, chopped1 cup red, yellow, or orange bell peppers, chopped2 cup potato, cut into cubes (about 2 small potatoes)4 cup kale, packed2 cup pinto beans, rinsed & drained (2 16 oz cans)seasonings to taste (black pepper, red pepper flakes, garlic, oregano)
Over medium heat, add sausage and onions to a large nonstick pot. Cook until sausage is slightly browned, 1-2 minutes. Add vegetable broth, peppers, potato, and seasonings. Bring to a boil. Reduce heat and simmer, about 5 minutes. Add kale and beans and simmer about 5 minutes more, or until potatoes and kale are tender.
