crockpot pork roast w/ spicy peanut sauce

2 lb. pork roast1 tbsp. olive oil for browning meat1/2 cup natural peanut butter1/2 cup tomato sauce2 Tbsp soy sauce1 Tbsp minced garlic1/2 Tbsp ground ginger2 Tbsp sriracha sauce
Heat olive oil in skillet, add pork roast and brown on all sides. This seals in the flavor. Place remaining ingredients in small food processor and blend. Place pork in crockpot, cover with sauce and cook on low 6-8 hours. Sauce may separate during cooking. You can wisk together, or if you wish, place in sauce pan and cook til reduced. Slice pork and spoon sauce over.
