Crunchy Caramel Banana Bread

1/4 cup canola oil1 cup vegan caramel sauce*1 tbsp vanilla extractegg replacer for 1 egg, prepared4 mashed bananas1/4 cup peach butter* 1 3/4 cups whole wheat flour1/4 cup rolled oats1/2 tsp salt1 tsp cinnamon1/4 tsp nutmeg1 tsp baking soda1/2 tsp baking powder1/2 cup slivered almonds1/4 cup sunflower seeds2 tbsp whole flax seeds
Preheat the oven to 325F and grease a loaf pan.
In a large bowl, combine the oil, caramel, vanilla, egg replacer, bananas and peach butter. Beat well.
Add the flour, oats, salt, cinnamon, nutmeg, baking soda and baking powder and mix until just combined.
Fold in the almonds, sunflower seeds and flax seeds.
Bake for 1 hour. Cool in the pan for 15 minutes, then turn out and cool completely on a wire rack.
Serving Size: Makes one 9x5" loaf pan, 10 pieces
