Quinoa, Sweet Potato and Apple Salad

Ingredients
QuinoaArugulaLettuceGranny Smith AppleSweet PotatoApple Cider VinegarOlive Oil
Directions
1. Cook quinoa in 3 cups water.
2. Dice sweet potatoes into 3/4" pieces. Toss with 1 Tbsp olive oil and season with salt and pepper. Roast for 25 min at 400F.
3. Cool quinoa and sweet potato in the fridge.
4. Dice apples into 1/2" pieces.
5. Whisk together vinegar and oil.
6. Toss all ingredients together.

Serving Size: Makes 5 ~2 cup servings.
