Introduction

Ingredients

    Vinaigrette
    juice of half a large grapefruit
    2 tablespoons balsamic vinegar
    1 tablespoon Dijon mustard
    2 tablespoons olive oil

    Salad
    2 tablespoons sliced almonds, toasted
    1/2 red onion, sliced thin
    10 cups mixed baby greens
    2 1/2 grapefruits, segmented

Tips

Soak the red onion in ice water for 15 minutes to take away any "sharp" taste.


Directions

Place the vinegar, and mustard in your salad bowl, then slowly whisk in the oil.

Place the salad ingredients in the bowl, then toss to combine. Serve immediately.

    It looks like the dressing is being double counted under the nutritional breakdown. There are 39 calories/serving for "olive oil" and then another 23 calories/serving for "oil and vinegar salad dressing". Not a big dicrepancy, but it does throw off the total caloric info and total fat. - 8/14/12

    This is def a keeper. Did not have balsmic so I used rice vinegar, and also tossed in some dried craisins. I made this for me only and hope that the dressing will keep for a day or two. - 3/10/12
