Faith's Black Bean, Corn & Cheese Quesadilla

15 oz. can of black beans, rinsed1 cup fresh or frozen corn niblets1 yellow onion chopped fine1 cup salsa1 cup Monterey Jack cheese, shredded8 6 inch corn tortillasspices to taste (I use cilantro)2 tbsp. olive oil, divided
Rinse beans. Sautee onions and any other spices in 1 Tbsp olive oil. Add rinsed beans and corn and heat through.
Put 1 tortilla in frying pan that has about 1 tsp of oil. Put 1/4 the filling on top, then 1/4 the cheese. Top with second tortilla and heat well. When browned on the bottom, carefully flip the tortilla and cook until brown on the second side and the cheese is melted. Slide onto heated plate, cut in quarters, and serve with salsa, guacamole, and plain Greek yogurt. Sides are not included in the nutritional information.
