Farmer's Market: Collard Wraps

1 large beautiful collard leaf
Set a mostly full five quart pot of water to boil.
Thoroughly wash the collard leaf. Lay the leaf bumpy side up on a cutting board, and, referring to the pictures, cut out the less flexible portion of the spine.
Boil two minutes, remove from heat and let drain and cool before proceeding to wrap, referring to the pictures.
Place 3/4c filling in the middle of the rounded half of the leaf. Pull the rounded edge over on top of the filling, shaping the filling into a tube. Fold the sides of the leaf onto the collard-covered filling to create a pocket. Roll toward the pointed end of the leaf.
