Mini Stuffed peppers

Ingredients
1lb 90/10 ground beef4oz neufchatel cheese15 mini sweet peppersShredded cheese for topping (optional)
Directions
Preheat oven to 350 degrees.

Cut tops off mini peppers. Halve lengthwise and remove membranes and seeds.

Brown ground beef in skillet, drain.
Add neufchatel cheese to ground beef, continue cooking until cream cheese has melted and coated the meat.

"Stuff" the halves with meat mixture. Arrange on cookie sheet. (Top with shredded cheese, if wanted. This will add to the nutritional value.)

Bake in oven on middle rack for 5-6 minutes. For softer peppers, cook longer.

Remove and let COOL a few minutes as peppers will be very hot to touch!

Eat and enjoy!
