sugar free banana bread

Ingredients
2 c flour1 c splenda2 tsp baking powder1/2 tsp baking soda1/4 tsp salt2 eggs2 ripe bananas1/3 c oil1/4 c milk
Directions
Heat Oven to 350, grease loaf pan. Combine dry ingredients in large bowl. Blend "wet" ingredients until smooth (2 min). Gradually add dry ingred. to wet. Blend until moistened. Pour into greased pan. Bake for 45-50 minutes, tooth pick inserted should come out clean. Cool in pan for 10 minutes. Cool completely on wire rack.

    I've made this recipe and found that 1 cup of splenda is a lot. Using only 1/4 cup works just fine! Also, mash the bananas before you blend them, or they shoot out all over the kitchen. The taste and texture of this bread are good. I will probably make it again! - 1/23/09
