Vegetarian Sausage, Beans, and Collards

1 Tbsp olive oil1 can red kidney beans, drained and rinsed8 oz baby bella mushrooms, quartered4 garlic cloves, chopped1 tsp Cajun seasoning (or to taste)1 tsp dried parsley1 tsp dried basil2 1/2 cups collards, chopped and stems removed, cooked2 Boca Italian Sausages, defrosted and sliced into half-moons1 can whole peeled tomatoes, undrainedsalt and pepper, to taste2 cups cooked spaghetti
Heat olive oil in a large saucepan. Add beans, mushrooms, and garlic. Cook 5 minutes, stirring frequently.
Add Cajun seasoning, parsley, basil, collards, sausages, tomatoes, salt, and pepper. Simmer 10 minutes on medium-low heat. Serve over spaghetti.
