Ingredients
* Chicken Breast, no skin, 2 breasts, bone and skin removed (cooked) * Cucumber (peeled), 1 large (8-1/4" long) * *President Fat Free Crumbled Feta, 1 oz * Olive Oil, 2 tbsp * Hodgson Mill Whole Wheat Couscous, 0.66 cup * *Lemon Juice, .25 cup * Parsley, 1 cup * Onions, raw, .25 cup, chopped
Directions
dice chicken and all veggies and mix together. Cook Cous Cous according to package directions. Mix Olive oil and Lemon Juice and add to salad. Mix well and Enjoy!

    This is fantastic! I made it for lunch today and want a second helping. I would recommend drizzling the olive oil onto the salad right before eating though, as the couscous absorbs the oil and you lose the flavor. - 4/28/08
