Celery Root Hashbrowns

1 large celery root (1 cup = 100 grams, I had 540 grams)1 T. salted butter for frying2 T. mushroom seasoning1 tsp. granulated garlic1 T. dried oreganoSalt & Pepper to taste
Cut off outer layer or the celery root, so you just see the white "meat". Grate into small hash brown size. Toss in a bowl with mushroom seasoning, garlic, oregano and salt and pepper.
Heat oven to 425 degrees. Melt butter in a large cookie pan with ridges (so the butter doesn't melt off).
Spread seasoned celery root onto the pan and let cook in the oven for 25 or so minutes. Stir a few times for even cooking.
EAT! It's great with eggs and sausage.
Serving Size: Cooks down to about 3 cups of hash
