Crockpot Zesty Italian Pot Roast

4 medium potatoes, quartered2 cups fresh or frozen baby carrots1 stalk celery, cut in 1-inch pieces1/2 cup diced plum tomato1 (2.5 lbs) boneless beef chuck roast1/2 tsp black pepper1 can tomato soup1/2 cup water1 tbsp roasted garlic1 tsp dried basil1 tsp dried oregano1 tsp dried parsley flakes, crushed1 tsp vinegar
1. Place potatoes, carrots, celery and tomato in the crockpot. Season roast with pepper and place on top of vegetables.
2. Mix together soup, water, garlic, basil, oregano, parsley and vinegar. Pour over meat and vegetables in stoneware.
3. Cover and cook on Low for 10 to 12 hours or on High for 4 to 6 hours or until done.
