Ingredients
2 cups of Corn (grilled optional)1 can (29 oz) Black Beans - drained & rinsed.1/2 cup grated Carrots1/2 cup Grape Tomatoes - quartered1 Serrano Pepper (ribbed & seeded optional)2 large Cucumbers - peeled & ribbed. Diced bite size1/2 medium/small Red Onion2 clove crushed Garlichandful of Cilantro - choppedMix all ingredients in a large bowl. Dressing:Mix Balsamic Vinegar with a small amount of brown sugar (to taste), add Salt & Pepper (to taste).
