Finely dice the dried apricot halves and add to all other ingredients other than the chicken breast in a saucepan, bring to the boil and then simmer until quite thick. Once cool pour over chicken breast(s), cover and store in the fridge for at least 2 hours. Place Chicken breast(s) in a pot and cover with 2-3 ladle spoons fulls of the marinade. Cook in a medium hot oven 180-200 degrees Celsius (350-390 degrees Fahrenheit) for 35-40 minutes until chicken is cooked through but not dry - if you use a smaller bowl this will help keep the breast tender and moist. Serve with whatever takes your fancy - salad, brown rice, wholemeal pasta & place a sprig of fresh coriander on top if you have it.
