Vegan Broccoli Potato Cabbage Soup

2 C Broccoli - chopped1 large onion - chopped8 Red Potatoes - chopped1 TB Olive Oil1/2 head red cabbage - chopped2 Cups almond milk2 cups water
Heat oil and saute onion in large pot
Add broccoli, cabbage, potatoes and water. Cover and cook until potatoes are tender but not too soft.
Move 3 cups of veggies into blender and blend with 2 Cups almond milk. Blend until smooth then transfer to clean pot.
Blend remaining veggies in batches, using the stock for blender liquid.
Return to big pot and season with pepper and basil. Simmer for 10-20 minutes, stirring occasionally.
