Stroganoff -- Low Carb

Ingredients
1LB.Sirloin Beef Steak, sliced2T.oil4T.butter3T.onion8T.heavy whipping cream1/4c.sour cream8oz.mushroomssalt, to taste .5t.paprika.5t.pepper1 egg yolk.
Directions
Slice beef into strips.
Chop 3T. onion
Melt butter and oil into pan, add beef and onions; cook until beef is mostly browned.
Mix sour cream, cream, paprika, salt, pepper. Add to beef and stir; simmer on low for 15-20 minutes.
In separate bowl, whip egg yolk. Add 1T of beef's sauce to yolk and whip again. Repeat 3-4 times, until yolk is warm. Add yolk mixture to beef mixture to thicken. Add mushrooms and simmer until desired "doneness"; at least 3 minutes.
