Ingredients
2 large chicken breast1 cup carrots1 cup celery1 small onion sliced thin1 1/2 cup cabbage chopped1 can 15oz tomatoes diced2 cups fat free chicken brothsalt and pepper to taste
Directions
Season chicken breast and bake until done in oven. Let cool the dice chicken. Chop carrots, celery, cabbage and onions. Saute vegetables until soft in 2T olive oil. Heat broth in pot and add can tomatoes add chicken and vegetables. Simmer low heat 1hr.

    I made this in a crockpot. Super easy, and filling! I just tossed all the items besides the chicken first, then laid the chick on top. After cooking on low for 6-8 hours, shred the chicken. Mix, and eat!
